Every autumn, the persimmon trees across Chitral's orchards ripen at once, and the fruit is picked by hand at its sweetest. Rather than using ovens or dehydrators, we dry it the traditional way, laid out under the sun for days until the natural sugars concentrate and the flesh turns a deep amber. It's a slower process, but it's the reason the fruit tastes the way it does.
